Jaipur, Rajasthan, 24 September 2026 – The Amber Terrace at The Leela Palace Jaipur will welcome Boilermaker, Siolim, Goa’s much-loved neighbourhood bar, for an exclusive one-night takeover on 30th September 2026. Bringing together Boilermaker’s easy-going bar culture with The Amber Terrace’s distinctive Root to Fruit philosophy, the evening will celebrate smashable cocktails, craft brews, inventive flavours and the pleasure of drinking under Jaipur’s open skies.
Perched against the dramatic backdrop of the Aravalli Hills, The Amber Terrace is an open-air dining and cocktail destination at The Leela Palace Jaipur. Its Root to Fruit philosophy celebrates ingredients through thoughtfully crafted cocktails inspired by botanicals, fruits, herbs and spices. For this special collaboration, the terrace will become a meeting point between the relaxed energy of Goa and the refined setting of a Jaipur palace.
Boilermaker, Siolim was created by beverage experts Pankaj Balachandran and Nakul Bhonsle, bringing together the cocktail expertise of Countertop India and the craft brewing expertise of Great State Aleworks. Inspired by Goa’s old-school neighbourhood bars, Boilermaker is built around a simple philosophy: good drinks, good food and a relaxed atmosphere where guests can simply enjoy the moment. The bar has also earned international recognition, being named among Asia’s 50 Best Bars at No. 8 and recognised as India’s No. 1 bar.
For one evening in Jaipur, Boilermaker will bring its signature approach to the city, with a beverage programme centred around short serves, smashable cocktails and sessionable drinks, alongside a selection of craft beers. The takeover will showcase the bar’s playful yet technically accomplished approach to cocktails, where unexpected flavours and expert technique come together without unnecessary ceremony.
The experience will also be complemented by The Amber Terrace’s Root to Fruit-inspired cocktails, creating a dialogue between Boilermaker’s freewheeling approach and the terrace’s ingredient-led cocktail philosophy. Against the Aravallis, the evening will bring together two distinctive expressions of contemporary Indian bar culture — Goa’s easy-going neighbourhood spirit and Jaipur’s palace hospitality.
Commenting on the collaboration, Anoop Pandey, Vice President & General Manager, The Leela Palace Jaipur, said:
“At The Leela Palace Jaipur, we are always looking to create experiences that bring together distinctive talent and perspectives from across India. Boilermaker brings the easy-going spirit of Goa, an exciting beverage culture and an approach that is both playful and expertly crafted. Bringing that energy to The Amber Terrace, against the Aravallis, creates a wonderful meeting of two very different expressions of Indian hospitality. We look forward to welcoming our guests to an evening that is relaxed, spirited and centred around great drinks.”
Pankaj Balachandran, Beverage Expert and Co-founder, Boilermaker, said, “Boilermaker has always been about the simple pleasures of a neighbourhood bar—good drinks, good people and an atmosphere where you can let your hair down. Bringing that spirit from Siolim to Jaipur and placing it against the beautiful setting of The Amber Terrace is something we’re really looking forward to. We’re excited to share a little bit of Goa with Jaipur.”
The collaboration reinforces The Leela Palace Jaipur’s commitment to curating distinctive culinary and beverage experiences through collaborations with acclaimed concepts and talent from across India. By bringing celebrated names from India’s evolving food and beverage landscape to the Palace, these collaborations offer guests an opportunity to discover new flavours and perspectives within an iconic Jaipur setting.
If the No. 8 Asia’s 50 Best Bars and India’s No. 1 references are from the same ranking/year, I’d recommend naming the exact list and year for stronger PR credibility.
